24 Nov Green Machine Pesto
This vegan pesto serves as an excuse to eat carbs, and it’s got plenty of green goodness to really pack a nutritional punch!
If you’re off carbs, you can replace the pasta with zucchini noodles for extra greeny goodness.
2 bunches basil
6 cups baby spinach
3-4 cloves garlic, crushed
2 lemons, juiced
1 large avocado
1 tablespoon nutritional yeast
1 tablespoon pine nuts (plus extra to serve)
Salt and pepper to taste
400g pasta of your choice, or 4 large zucchinis, made into zoodles
1 large head of broccoli or 2 bunches of broccolini
Cook pasta according to packet directions. Set aside and drain.
Put basil, spinach, garlic, lemon juice, avocado, nutritional yeast, pine nuts, salt and pepper in a blender of food processor and blend until smooth.
Blanch broccoli for a few minutes until it’s a nice vibrant green colour.
Place pasta back into pot to warm through, and pour in pesto mixture.
Serve into bowls and top with your broccoli and garnish with extra pine nuts.
