Coconut, Raspberry and Chocolate Mousse

The miracle of aquafaba!

Having heard about this miracle water, we decided to check out ways we could use it. We failed at the meringues, but the mousse was much easier and especially delicious!

This chocolate dessert will please any non-vegan too, we promise!

Serves 6.

INGREDIENTS:

2x can’s worth of aquafaba¬†water (the water inside a can of chickpeas works best!)

400g dark chocolate

1/4 cup desiccated coconut

1 punnet raspberries

 

METHOD:

Place a small pot onto boil and melt chocolate in a small mixing bowl on top. Stir through coconut. Set aside.

Place aquafaba liquid in a large mixing bowl and mix with a hand blender for at least 5-10 minutes until the mixture goes fluffy and firm and takes a mousse like texture. (Take a small spoonful and hold upside down – if it stays, the mixture is set)

Stir through chocolate and coconut mixture through the mousse – not for too long though, you don’t want to deflate the mixture!

Place into 6 small bowls and refrigerate for at least two hours.

Serve with raspberries on top and enjoy!
